Finger Limes
Finger LimesFinger limes are a new and unique citrus variety that continues to spark creativity in the kitchen. The finger lime’s inedible exterior resembles a pickling cucumber or cocktail avocado in shape and size. Its skin is thin, ranging in color from purplish or greenish-black to light green or rusty red.
When finger limes are sliced in half, the lime juice caviar is revealed. Apply gentle pressure, and the caviar will ooze out of the fruit like a lava flow.
Serve finger limes over salads, seafood, and any dish that is looking for a fresh pop of citrus with a creative presentation.
Choose slightly firm fruit with no scarring or bruises. Refrigerate for up to one week in a plastic bag.

Kishu Mandarins
Kishu MandarinsThe adorable, seedless Kishu Mandarin is one of California’s most unique citrus gems. About the size of a walnut, (yes, they’re that small!), Kishu’s boast a vibrant orange color with a slightly pebbled skin that’s surprisingly easy to peel. Unlike some mandarin varieties, Kishu Mandarins are completely seedless, making them a perfect and convenient snack for kids and adults alike. Their burst of sweetness and tiny size offer a refreshing and unique citrus experience. Enjoy these seasonal treats during winter months to add a touch of sunshine to your day.
Melissa’s Kishu Mandarins are hand-selected for excellent quality. Choose fruit with a nice, deep orange coloring, a fragrant scent and no soft spots.

Kumquats
KumquatsKumquats are a unique member of the citrus family. They are small, egg-shaped, and can be eaten whole. Known as the inside-out orange, kumquats are sweet on the outside and tart on the inside.
Despite its small demeanor, kumquats are filled with a burst of sweet-tart citrus flavor. The paper-thin skin is where the majority of the sugar lies and has virtually no bitter pith; however, the flesh is mouth-puckeringly sour.
To no surprise, kumquats are an excellent source of vitamin C and fiber and have more fiber in a serving (about 8 Kumquats) than most other fresh fruits. Because the entire fruit is edible, it can be candied or eaten whole. If candied, kumquats are perfect in fruitcakes and holiday truffles.
Also use in dressings, frostings or preserves, or mix into stuffing, cakes and muffins.
Look for fruit that is shiny with good color. Avoid those with blemishes or soft spots. Store in a cool location up to seven days, or refrigerate unwashed, wrapped in plastic
Ojai Pixie Tangerines
Ojai Pixie TangerinesSavor the tasty, delicate treat of tree-ripened fruit bursting with sunshine-sweet flavor and juice. This seedless variety is the result of open pollination of Kincy, King and Dancy mandarins. Popular backyard trees in Ojai, California, they bear small to medium-sized citrus, having pebbly textured, yellow-orange rinds with loose skins that peel easily. The segments separate neatly for a quick snack, making them a great choice for eating out of hand.
For the juiciest, sweetest fruit, look for Ojai Pixie Tangerines with a sweet, clean fragrance. Store at cool room temperatures for up to one week or refrigerate for up to two weeks. Peel Ojai Pixie Tangerines before use. Five medium-sized Pixie Tangerines equal approximately one pound.

Seville Oranges
Seville OrangesAlthough “tangy” is not a quality typically preferred in an orange. Seville oranges are extremely juicy and segment very neatly, containing very few seeds.
Seville oranges are ideal for marmalade because of their wonderfully strong orange taste and the fact that they are so easy to prepare. After preparing the recipe and refrigerating, this orange, which began as sour and bitter, is transformed into a delightfully sweet and tart marmalade, unmatched in flavor. Another benefit is the tangy juice of Seville oranges, which gives any savory or sweet dish a tart, clean and crisp taste.
