Canary Melons vary in shape from oval to oblong, almost similar to a bright yellow Honeydew Melon. The pale green to cream-colored skin protects the juicy pale orange flesh. They are delicious eaten by themselves, included in fruit salads, or added to drinks, such as fruit punches or daiquiris. For a new twist, try one with a sprinkle of ginger, salt, or a squeeze of lemon or lime.

The casaba melon was first cultivated in Persia thousands of years ago. It wasn’t introduced to the United States until the late nineteenth century when it was imported from Kasaba, Turkey.

Casaba melons are golden yellow with greenish coloration on their wrinkled exterior. The round, pumpkin shaped melon has a slight point at the stem end. The flesh is creamy-green, juicy and lightly sweet. Delicious eaten by as is, or for added flavor, try it with a sprinkle of ginger, salt, or a squeeze of lemon or lime juice. Casaba melons add sweetness to fruit salads and are refreshing used in drinks, like fruit punch, margaritas or daiquiris.

Charentais melons are said to be the finest melon in both taste and texture. Because of their small size, they are the perfect “breakfast for two” melon.

These globe shaped fruits have either a smooth or a slightly netted gray-green rind with dark green, slightly furrowed sutures. They have an orange flesh and a luscious, flowery aroma.

Popular in Europe, Charentais’ are especially prized in France for their rich, honeyed finish. Try wrapping slices of Charentais with proscuitto as an appetizer or cut one in half and serve with port wine poured over it for a special dessert.

A newer hybrid melon developed in Japan. The Ivory colored melon has a pure white, thin skin with occasional green streaking; the interior fruit is also white with a moderately sweet taste. Gaya melons are are somewhat sweet and have a flavor reminiscent o a juicy pear and banana mix. Product of Mexico

Gaya Melons have a very long shelf life when stored in the home fruit crisper. Choose melons heavy for their size. A Gaya melon is ripe when there is a little give at the flower end of the fruit.
